We make this preparation with three products:

The most select Spanish GREEN OLIVES, large in size with ANCHOVY FLAVOUR, which provides it with a delicate and exquisite flavour with VERY LITTLE ACIDITY AND VERY LITTLE SALT. The mean size for the olives is about 120/140 units per Kilo.

The most select freshly treated EXTRA GHERKINS, very crunchy with ANCHOVY FLAVOUR, which provides it with a delicate and exquisite flavour with VERY LITTLE ACIDITY AND VERY LITTLE SALT. The mean size is about 200/300 units per Kilo.

Extra freshly treated PICKLED ONIONS, very crunchy with ANCHOVY FLAVOUR, which provides it with a delicate and exquisite flavour with VERY LITTLE ACIDITY AND VERY LITTLE SALT. The mean size is about 18/21 millimetres.
